Liquid soya lecithin, listed as E322, is an emulsifier derived from soybean oil. It allows oil and water to mix and stay mixed, which is why it appears in products that would otherwise separate. In food and beverage production it stabilises emulsions, improves texture and helps disperse fat-soluble ingredients evenly through a formulation.
Manufacturers use it in baked goods, chocolate and confectionery, margarine and spreads, instant powders and beverages. It is supplied as a liquid, so it disperses readily in oil and is normally added to the fat phase rather than to water. It is viscous and sticky, and should be stored sealed and protected from heat and oxidation, since it can darken and develop off notes over time.
