Acacia gum, also known as gum arabic and labelled E414, is a natural gum obtained from the dried sap of Acacia trees. In food and beverage production it works mainly as a stabiliser, thickener and emulsifier, helping flavours, colours and oils stay evenly dispersed and improving texture and mouthfeel in finished products. It belongs to the gum category of food additives.
Manufacturers use acacia gum in confectionery, beverages, bakery items and flavour emulsions, where its ability to hold oil droplets in suspension is valued. It is supplied as a spray-dried or granular powder that dissolves readily in water to form solutions of relatively low viscosity compared with other gums, so it handles well in liquid systems. It is stable in acidic conditions and generally tolerant of processing heat, though solutions are best prepared with consistent agitation to avoid lumps.
