Sodium carbonate, also known as disodium carbonate or carbonic acid disodium salt, is an acidity regulator (E500(i)) used to control pH in food and beverage production. It neutralises excess acid and can raise alkalinity, helping texture, colour and stability during processing. Supplied as the anhydrous form, it dissolves readily in water, so it mixes easily into liquid systems. As a bulk ingredient it is a straightforward, economical way to adjust acidity where a recipe calls for it.

Manufacturers use sodium carbonate in baked goods, cocoa processing and certain beverages, where pH control affects flavour and colour. A formulator should note it is strongly alkaline in solution, so it needs careful weighing, dry storage and avoidance of skin or eye contact. It is hygroscopic and can cake if left open, so keep containers sealed. It is regulated under Reg. 231/2012.
