Alcohol vinegar is a liquid acidulant produced by the fermentation of ethanol, giving a crystal clear liquid with a strong alcohol odour. In food and beverage production it lowers pH and adds sharpness, functioning as an acidulant alongside other common acids used for the same purpose. It is soluble in water, so it disperses readily in aqueous systems such as sauces, dressings, marinades and soft drinks.
Manufacturers use it where a clean acidity and a volatile note are wanted, including pickles, condiments and bakery applications. A formulator should know it arrives as a liquid, mixes easily in water, and needs closed, cool storage because the alcohol odour is strong and can carry into the finished product. Handle it as a bulk liquid acid.
